Visit Colorado: A Fantastic Dinner at The Pullman in Glenwood Springs

Discovering great eateries when traveling is something I love to do. Unique spots serving locally sourced ingredients are not too tough to find in today’s culinary landscape.
With a full day of activities during our stay in Glenwood Springs Colorado, I was excited to relax and have an awesome dinner at The Pullman.
The Pullman
The Pullman is one of those restaurants you will go out of your way to go to. A true culinary destination, their dishes are both creative and tasty. Seating 80 in the restaurant + 12 at the bar, this laid back casual eatery is affordable with fantastic service and awesome food.
Located just a short walk from Hotel Colorado and Glenwood Springs Hot Pool, The Pullman is a great spot for dinner after a fun day.
What We Ate
We started off our dinner gauntlet with these crispy pork rinds with truffle oil and parmesan. So good!
Next up were these tempura battered corona beans with rosemary salt. Unfortunately, they are no longer on the menu, but I will say they were kinda good!
One of the highlights for me were these bacon pickled deviled eggs with a maple gastric. I’m a sucker for devised eggs, and I may have had more than three… and I am so not sorry to the people I was with!
I love hush puppies, and these smoked salmon hush puppies with dill cream did not disappoint. Unfortunately, they are no longer on the menu either.
We ordered these herb grilled whole artichoke halves. I did have a few, and they were good, but I was having room for my main course.
These pierogis with truffle potato, caramelized onions, and scallion crème fraiche were quite tasty!
My main course was this grilled angus flat iron with crispy smoked potatoes, green bean casserole, and six89 steak sauce. Oh my… was it ever amazing! Prepared just the way I ordered it.
I ended off my meal with this delicious butterscotch budino with salted caramel and sweet cream. Glad I saved room!

blackened salmon: romaine, anchovy vin, hard boiled egg, croutons, reggiano
roasted local vegetables: red wine vin, two roots arugula, feta, sunflower seeds, tzatziki

grilled steak: field greens, fries, blue cheese, grilled onions, house bacon

summer vegetable cianfotta: parmesan broth, basil pesto, grilled bread
eggplant cannelloni: mushroom risotto stuffed, tomato coriander sauce, crispy basil
grilled natural ½ chicken: heirloom tomato & basil panzanella; sherry pan jus
roast rocky mountain trout: fingerlings, squash, smoked almonds; brown butter sage vin
roast AK halibut: rock shrimp & fava bean succotash; house tartar sauce
pullman grass fed burger: caramelized onion, white cheddar, english muffin

Closed daily for Siesta: 3:30pm to 4:30pm
Reservations aren’t required, but always welcome and accepted.
