Visit Colorado: Brunch at Seasoned, An American Bistro

If I had to choose my favourite meal of the day, it would be a weekend brunch. You get the best of breakfast and lunch all rolled into one menu.
Seasoned, An American Bistro
This warm and inviting chef-owned bistro in Estes Park Colorado serves up classic American cuisine with a unique flair. The name of the restaurant highlights Chef Rob Corey. “SEASONED” is a person accustomed to particular conditions, or experienced in their field.
The restaurant’s mission statement is “to serve the community of Estes Park twelve months of the year, to treat every guest as special to us and our business, and to create a family working environment”.
What We Ate
There was a good selection of breakfast and lunch items on the menu. I decided on the Bistro Eggs Benedict. Potato cakes, braised bacon, soft eggs, tomato, asparagus, greens, red wine vinaigrette, béarnaise. Filling, as potato cakes are used in place of English muffins. So good!
This was probably the best bacon I have ever eaten. Thick cut, and slowly braised, then crisped on the grill. Ever bite was delightful.
We just had to get the French Press coffee. The coffee was amazing!
The Brunch menu has a good variety of items for every palette:
Frenched Toast: Organic Montana toast, Neuske’s bacon, berries, honey butter, pure Vermont maple syrup, powdered sugar
Cinnamon Raisin Toast: Grilled and oven toasted cinnamon raisin bread, dulche de leche, bananas, Neuske’s bacon, honey butter
Country Brunch: Fresh hens eggs, potato and onion cakes, Neuske’s bacon, butter milk lemon scone, honey butter
Buttermilk Ricotta Pancakes: Three-cake stack, buttermilk and ricotta cheese, honey butter, pure Vermont Maple syrup, Neuske’s bacon
Bistro Eggs Benedict: Potato cakes, braised bacon, soft eggs, tomato, asparagus, greens, red wine vinaigrette, béarnaise
10 O’clock Eggs: Sautéed king trumpet shrooms, foie gras butter, grits, soft eggs, frisee, pickled mustard seeds, croutons
Veg Benny: Potato cakes, asparagus, acorn squash, black bean and bell pepper fritters, soft eggs, mixed greens, red wine vinaigrette, béarnaise
Colorado Striped Bass: Pan-fried fillets, black bean, scallion and cherry tomato succotash, asparagus, frisee, red pepper aioli
Greens: Baby Romain, frisee, pickled heirloom cherry tomatoes, radish, croutons, red wine vinaigrette
Sunday Salmon: Smoked salmon, house-made rye bread toast, salted butter, pickled red onions, béarnaise
Butternut Squash Soup: Butternut squash purée, croutons, chives
Pasta Bowl: Sweet cream, aged sharp cheddar cheese, penne, bacon fat crumbs, blue cheese, chives
Pesto Pasta: Basil and walnut pesto, penne, roasted asparagus, Parmesan cheese
Tomato Pasta: Saffron and San Marzano tomato sauce, blistered cherry tomatoes, Parmesan, parsley
Junior Frenched Toast: Organic Montana toast, berries, whipped honey butter, pure Vermont maple syrup, powdered sugar
Junior Pancake Stack: Two cakes, honey butter, pure Vermont maple syrup, powdered sugar
