Visit Colorado: A Fantastic Mexican Fiesta at Ed’s Cantina

A really good Mexican restaurant is very tough to find. When at home or traveling, I have been out for Mexican food and been quite disappointed on more than one occasion. This was not the case at Ed’s Cantina in Estes Park Colorado.

With the Rocky Mountains in the background, I had my hopes high for a great Mexican fiesta!

What We Ate

We started our meal off with the housemade guacamole. There was just the right amount of cilantro for my liking. Tasted great!

Then it was time for chips, salsa, and queso. The chips were warm, and the house made salsa was delicious!

Then it was time for main course. I got the 14er Burrito. My gosh! It was big, and jam packed with meaty goodness! Not gonna lie… I couldn’t finish this at the restaurant.

Wild Mushroom Flatbread: Roasted Colorado mushrooms, arugula, pickled onion, serrano-goat cheese spread, chile-lime balsamic
Guacamole: Tortilla chips, housemade salsa
Queso Dip: Two cheeses, chips, salsa
Steak Quesadilla: Grilled sirloin, jack cheese, sour cream
Rollos De Queso De Cabra: Goat cheese eggrolls, serrano & red pepper, arugula, onion-habanero jam
Tocino Envuelto Jalapenos: Bacon wrapped jalapenos, cheese, dates, aioli
Roasted Jalapeno-Avocado Hummus: Arugula, tortilla chips, cherry tomatoes
Chips And Salsa: Roasted tomato salsa made daily


Panzanella Salad: Black beans, lettuce, pico, avocado, cornbread croutons, habanero crema, chile-lime balsamic
House Greens: Arugula & green leaf, goat cheese, apple, pepitas, dates, agave vinaigrette
Pork Carnitas Pozole: Traditional stew, hominy, Mexican herbs, cabbage, jalapeno, cilantro
Soup Of The Day: Housemade – Cup or bowl

Justin’s Burger: Avocado, serrano goat cheese spread, pepperjack
“The Jam” Bacon Burger: Bacon, cheddar, onion-habanero jam
Veggie Wrap: Quinoa, arugula, avocado hummus, pico, goat cheese spread
Bison Burger: Housemade daily
Carne Asada Torta: Grilled sirloin, avocado, chipotle aioli, pickled onion, pepperjack cheese, lettuce
Chorizo-Huevo Torta: Scrambled eggs, jack cheese, avocado, chipotle aioli
Poblano Grilled Cheese: Chipotle aoili, pepper jack, cheddar, on garlic flat bread


Fish: Soft flour, pico, cabbage, cilantro jalapeño sauce
Chicken & Avocado Salsa: Soft corn, cheese, pickled onion
Steak Street: Soft corn, cilantro, pickled onion, cheese
Veggie-Quinoa: Crispy blue corn shell, mole blanco, pico, quinoa, microgreens
Bison: Crispy blue corn shell, pico de gallo, cheese


14er: it’s BIG! Steak, chorizo, bacon, pico de gallo, Mexican cheese, sour cream, guacamole, rice and pinto
Veggie: Quinoa, mole blanco, black beans, pico de gallo, squash salsa, spinach tortilla

Chile Relleno: One crispy, roasted poblano with jack cheese, tomatillo chile, pickled onion, black beans, rice, potato cake
Roasted Mushroom Poblano: Colorado mushrooms, quinoa, squash salsa, mole blanco, pickled onion, microgreens, corn tortillas
Enchiladas De Vegetales: Squash salsa & black bean w/ tomatillo chile, quinoa & black bean w/ mole blanco, cilantro, pickled onion, guac, chips, rice
Bison Enchiladas: Ground bison and cheese, tomatillo chile, lettuce, pico de gallo, rice & pinto beans, habanero crema, chips
Tres Enchiladas: Squash and black bean enchilada with tomatillo chile, bison and cheese enchilada with pork red chile, chicken tinga enchilada with mole blanco
Fajitas: Steak or chicken peppers, onions, pinto beans, lettuce, tomato, sour cream, guacamole, cheese
