Visit Colorado: An Amazing Dinner at Aurum Food & Wine

Dining out while traveling can be such a great experience. Especially if you end up dining at a riverside restaurant in Colorado, where kayakers are traversing the flowing rapids. It truly adds to the dining experience. If the food is awesome, that is a bonus. That was our experience at Aurum Food & Wine in downtown Steamboat Springs.

Owner Phillips Armstrong describes the menu at Aurum as Seasonal New American Cuisine driven by the Rocky Mountain region. Chef Patrick Funk finds the most locally relevant ingredients to showcase every season.
The dining room is dimly lit for a more fine dining feel. There is a wonderful riverside patio if you prefer outdoor dining. If casual is what you are after, there is lot of room at the bar and in the lounge to enjoy some music, a cocktail, and some appetizers.
What We Ate
For dinner, we decided to order a few shareable plates as opposed to ordering mains. The fresh bread was nice and warm, and the oils were delicious.
Raymond ordered the Soup Du Jour, which was Creamy Mushroom. I tried it, and it was very creamy!
Most of the dishes we ordered didn’t have a lot of vegetables, so the Crispy Brussels Sprouts with shaved parmesan and crushed red chili made up for that. Super healthy, and quite tasty!
I was pleasantly surprised at how good the Pan Seared Jumbo Scallops were. I have never had them prepared this way: in mushroom consommé with white beans, chorizo, prosciutto chip. Amazing!
I didn’t try the Seared Hudson Valley Foie Gras, but the rest of the table enjoyed it.
These House Smoked Pork Ribs were fantastic! The Gochujang Sauce gave them a nice kick!
The Steak Tartare & Bone Marrow was a popular dish at our table!
I really loved the Jumbo Lump Crab Cakes with remoulade and herb salad. Didn’t taste like there was any filler in these bad boys!
A family style meal is not complete with a Charcuterie Platter: Chef’s choice of salumi, pickled & preserved vegetables, whole grain mustard, and pain au lait. Delicious!
My favourite dish were the Grilled Bison Teres Major Skewers, with carrot top pesto and spiced carrot aioli. So good and very tender!
