I was enjoying a fantastic meal from the tasting menu at Canoe Restaurant in Toronto earlier this year. My friend Aaron invited me to join him at Chef’s Rail. It was quite the experience.

When dessert came, my mouth dropped, and I paused. I took a moment to just take in the beauty of what was sitting in front of me. The first thing I thought was… how awesome would it be to have this dessert on my birthday, which just happens to fall on Canada Day? The colours were vibrant, and it screamed Canada to me.
